I have been on a lemon dessert kick lately. I love most anything sweet although chocolate is my typical choice, but I have found myself going for the lemony things lately.  It could have something to do with the light and fluffy nature of lemon sweets especially during the hotter summer months. This dip is super creamy and is made with fresh lemons for a tart, but sweet treat. If you aren’t a lemon fan though, check out this dark chocolate sea salt fruit dip.

I hope everyone is having a great summer and getting some time to relax and have fun. We haven’t taken a vacation yet this year, but are planning a few trips this fall. We don’t have kids so it’s a bit easier to go places whenever we feel like it and can avoid the crowds and humid, hot weather. Our first trip is next month and we’ll be going to New Orleans for Justin’s dad’s 70th birthday. We are going to take a couple of days to stay downtown to eat and drink our way around the city. Then we will hang out with the family and eat and drink some more. Did I mention there will be eating and drinking involved? I love going to NOLA because I know my taste buds will be very happy. I’m already thinking about it what I’m going to eat. There’s also already talk of a Shrimp boil! I then head from New Orleans to Texas for a work trip where I’m always fed well.

I’m definitely going to need to keep up my exercise routine. I’ve been to the gym 3 times a week for the last month. That’s enough to make it a habit right? I’m also trying to take our dog for a 20 minute walk on most days and trying to eat more fruits and veggies. It’s so hard to fit everything in! I really want to stick with it though so attempting to make the time. My goal is to hit the gym in the mornings before work, but I’m not a morning person so that is a bit of a challenge. I’m making it work though now if I can just keep at it!

Ingredients
  

  • 1 cup heavy whipping cream
  • 1 8oz cream cheese, softened
  • 1 cup+ 2 tbsp powdered sugar
  • 6 tbsp lemon juice
  • 4 tsp lemon zest
  • 1 tsp vanilla

Instructions
 

  • In a bowl, combine heavy whipping cream, 2 tbsp powdered sugar, 2 tbsp lemon juice and 2 tsp lemon zest and whip until soft peaks form. Set aside. 
  • In a separate bowl, add the cream cheese. Using a mixer on medium speed, mix until creamy. Add in remaining lemon juice, lemon zest, and vanilla. Slowly add in powdered sugar and mix until combined. 
  • Fold the whipped cream mixture in the cream cheese mixture until just combined. 
  • Refrigerate for 1 hour or until ready to serve.

    I served this tonight at bridge with chocolate graham pretzels, Pepperidge Farm French vanilla Pirouette cookies, and strawberries. It was a HUGE hit. I’ll for sure be making it again and again.
