Mexican Corn Dip with Jalapenos

A delicious Mexican Corn Dip with jalapenos that is creamy, cheesy and full of flavor. This appetizer dish is super easy and can be served cold or hot.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 tbsp butter, softened
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/4 tsp salt
  • black pepper to taste
  • 1 tbsp lime juice
  • 1 tbsp garlic cloves, minced
  • 2 jalapenos, seeded and diced
  • 1 red bell pepper, diced
  • 1 tbsp green onions, diced
  • 3 cups corn
  • 1 1/2 cups cheddar cheese, shredded

Instructions

  • Whip together the cream cheese, sour cream and butter until creamy.
  • Add in spices and lime juice and stir together.
  • Mix in peppers, onions and garlic.
  • Add corn and cheese and mix to combine.
  • Cover and refrigerate for at least 2 hours.
  • Optionally, transfer to a baking dish and bake at 350 degrees for 20 minutes to serve warm.
